What do the B-vitamins do?

The B-vitamins (B1, B2, B6, B12, folate and others) act as coenzymes that help convert food into energy. B12 and folate in particular support red-blood-cell production and nerve function. Being water-soluble, they aren't stored well, so daily intake is normal — and B12 is the one to watch on a plant-based diet.
